This should be really simple, but I'm blanking on how to do it. I want to replace the white areas within and above the lattice with some sky. Help!

Craig,
Try this.
1. Duplicate the background layer.
2. Select the white areas within and above the lattice. Try the Magic Wand tool with low Tolerance and keep the Contiguous setting unchecked. You may have to do some "clean-up" of your selection because of other white areas in the image.
3. Press the Delete key to get rid of the selected white areas.
4. Copy/paste the Sky image on the duplicate background layer. Or do File>Place.
5. Drag the Sky layer underneath the duplicate background layer.
6. Use Free Transform to resize/reposition the sky.
